The Patio At Polo Breathes New Life into Wellington’s Culinary Scene

Wellington, Fla. – Feb. 1, 2018 – While the town of Wellington is globally known for its equestrian prominence, the dining and culinary sphere lacks in comparison, largely categorized by chain restaurants and strip malls. Chef Mat Allen and Sheila Motley, the husband-and-wife owners of The Patio At Polo, set out to change that unfortunate fact, and in the process created Wellington‘s most enchanting restaurant. Their stand-alone venue boasts a bold menu and one-of-a-kind space enhanced by a distinctive atmosphere unlike any other.

“I would like to give Wellington what it deserves. I want to give them something new, something creative and something different,” said Chef Allen. “People enjoy The Patio At Polo because they feel like they can escape a bit. You feel like you’re not in town. You get out of the shopping malls, the strip malls and the parking lots. Our space is unique in that sense.”

The culinary team at The Patio At Polo are experts at preparing both traditional favorites and dishes with bold new flairs. The eclectic and dynamic menu features classics such as a burger trio and fish tacos, complimented by plentiful options for the more adventurous palate including seared scallops in a butternut puree, shrimp and grits in a bacon marmalade and sun-dried tomato basil ice cream. A curated wine list designed specifically with the Wellington-resident in mind supplements the inventive menu. With classically-trained Chef Allen, who has worked for the Queen of England and the Royal Family at Windsor Castle, overseeing the menu and food preparation, guests can expect to be treated to premier cuisine sure to impress.

“I love that I have the ability to write and change the menu every couple of weeks. We can experiment and play with what works and what doesn’t work, and hopefully make people happy by it. I like to keep my dishes simple yet with a twist,” said Chef Allen.

Adding to the appeal, The Patio At Polo offers a uniquely family-friendly setting to appease both adults and children. Situated on an expansive lawn, it allows for children to play together directly beside the open-air restaurant within clear view of the parents, making for a stress-free and memorable dining experience for the whole family. The intimate atmosphere provides a charming setting for the local and equestrian communities alike, with the perfect blend of both casual and elegant elements producing a space overflowing with character.

“We aren’t corporate. We’ve kept the atmosphere casual so that equestrians may come inside to eat in their boots and breeches straight from the barn. I’d love for everyone to stop in for a drink and a bite to get a feel for what makes The Patio At Polo so special. Once they are here, I think they will appreciate it,” said Chef Allen.
